What's for dinner?

I always have a hard time deciding what to make for dinner. Generally it's because I try and cook things that will please all 3 of us. With Brian working the afternoon shift what I make one night he'll eat for dinner the next night. Meaning, meals must be microwave friendly. This puts a lot of stress on my dinner planning.

Throw in a game here and dance class there. I need quick meals and I am ALWAYS looking. My favorite recipes are crockpot recipes. Something I can put together before I leave and that will be ready when I get home.

So far my week looks like this:

Monday (Parent Meeting 5:30 followed by a 7:30 game)- Ron’s Hamburgers

Tuesday (Dance Class 5:30-7:00 Mr. Highstepper)- Bean Soup over rice with cornbread

Wednesday (free night- work on Ethan's Halloween costume)- Taco Salad

Thursday (something at church)- Apple Bourbon Pork Loin with roasted potatoes

Friday (another free day and Brian's night off)- Dinner TBD


Someone send me a good recipe! That's easy. And isn't so frou-frou my husband won't eat it.

EDIT: I adjusted my menu to my taste buds!

Man, I wish I had my week planned like that! I usually just make it up an hour or so before dinner. I have to sacrifice the pantry in order to get dinner cooked. The girls drag anything and everything out that they can. Have you ever fixed pork chops in mushroom gravy? They're really easy. Get some thin cut porkchops, brown them, spread some cream of mushroom soup on the bottom, layer the porkchops, cover them with the rest of the soup and let them cook on low for 6 or so hours depending on the crockpot. They are sooooo good! I usually use a couple of the family size cans, but I am usually cooking for me, Jeff, the girls, my dad, stepmom, sister, and her fiancee. Just make sure you use enough for gravy for mashed potatoes and green beans. Yum!
