Okay. Here it is. Gammy's Fresh Coconut Cake
You'll need:
1 Classic White Cake mix (I use Duncan Hines)
1 Coconut (pictured below)
1 pint heavy whipping cream
3-4 T white sugar

Step 1. Poke holes in the coconut. Drain the juice and put aside.

Step 2. Crack open the coconut and remove all the meat (white stuff).

CAUTION: Use care when cracking the coconut as one can be injured easily.

Bake cake as directed replacing the water with drained cocnut juice. If you do not have enough you can use 2 coconuts, coconut milk, or water. Allow cake to cool completely.

Next, make the whipped topping. Start by pouring heavy whipping cream into chilled bowl.
On medium to high speed, mix whipping cream. Make sure it thickens before you add any sugar. Add sugar as needed and continue to mix whipping cream.
Keep mixing until it looks like this:
Frost cakes. Shred coconut and sprinkle on top of the cake.

Eat cake and enjoy a luau with your friends!

mmmmmmm....looks delicious! i might have to try it. a little concerned about finding a coconut though. i saw one on our honeymoon in st. lucia. maybe i will go back to get one!!!
